Gina's hashbrown casserole recipe

HASHBROWN CASSEROLE

Ingredients

Potato mixture

1 pound frozen diced hash browns

1 onion, diced

1 10.5oz can cream of chicken soup

1/2 cup sour cream

1/2cup plain Greek yogurt

2 cups shredded cheddar cheese

2 tablespoons butter, melted

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

Salt, to taste

*Optional - 4-6 slices bacon, cooked and crumbled

Cornflake topping

2 cups cornflakes

1 tablespoon butter, melted

1/2 cup shredded cheese (optional, for the top)

Instructions

Preheat oven to 350.

Spread potatoes on baking sheet and bake for 10-15 minutes to dry them out. (This will avoid a watery casserole.)

Cook the bacon

Cook 4-6 slices of bacon in a skillet until crisp. Transfer to a paper towel-lined plate, let cool, and crumble.

Soften the onions

Melt 1 tablespoon of the butter in a skillet over medium heat. Add the 3 cups of diced onion and cook for about 8–10 minutes until softened and lightly golden. Set aside.

Make the creamy cheese sauce

In a large mixing bowl, combine:

Both cans of cream of chicken soup

1 cup sour cream

½ cup Greek yogurt

3 cups shredded cheese

Garlic powder, onion powder, smoked paprika, and black pepper

Start with ¼ teaspoon salt

After combined, fold in the cooked onions and crumbled bacon.

Mix in the frozen hash browns

Add the diced hash browns directly to the bowl. Stir thoroughly so the potatoes are coated in the sauce.

Fill the baking dish

Grease a 9 × 13-inch baking dish with butter or cooking spray and spread the potato mixture evenly in the dish. Cover with foil and bake for 30 minutes.

Prepare the cornflake topping

While the casserole begins baking, mix with 1 tablespoon of melted butter with cornflakes.

Bake the casserole

Remove the foil and sprinkle the buttered cornflakes over the top. Bake uncovered for another 15–30 minutes, until the center is hot and bubbling and the topping is golden.

*If the cornflakes brown too quickly, loosely cover the dish with foil again.

Rest and serve

Let the casserole rest for 10 minutes and then serve.
